My problem is that when I get out of the groove of meal planning, it takes some work to get back on track. I've been off since the beginning of August it seems like. After Mark & I got back from our visit to MN, I jumped full speed into the new school year. I've hardly been able to catch my breath. It's been much easier to just eat out or to make quick trips to the store for staples and quick meals. I don't feel all that great about the way we've been eating. It would be wonderful to start eating healthier again and to take advantage of the fall produce that is available.
That's why I'm considering trying this 6 week meal plan challenge. I came across it last week, and I've been mulling it over. I am nervous that I won't be able to keep up with it, even though it's only 6 weeks. I'm laughing at myself right now. This really shouldn't be that hard, but I think the accountability part and sharing my meal plans is a little intimidating.
There... I just sent a request to join the group. We shall see what happens. If nothing else, I will attempt to post meal plans here. The challenge officially starts next Monday, September 26th. As a practice run, here's my meal plan for this week:
(By the way, I generally only plan for supper/dinner, because I eat lunch at school and Mark fends for himself at lunch)
Wednesday: Baked Potato Soup for Community group
Thursday: Left over soup? (I will be at a youth ministry meeting, Mark's on his own)
Friday: Cheeseburgers & grapes
Saturday: Chili
Sunday: More Chili (I will eat at Cell Group)
There's my plan to get started again. Do you do meal planning? What helps you stay organized? What are your favorite healthy meals? I have a long way to go as far as building healthier menus- one of my main goals in meal planning :)
